Exchange VM Backup

I see that the recommended way to backup a hyper-v VM is through the hyper-v host. However, the VM in question is exchange 2013. What is the recommended way to backup a VM that is exchange? I need to be able to purge the logs and it does not seem the recommended way does not do this.
